Winery of the month at Vinitaly "La Cantina La Salute"

 

........."The Piave history is strictly linked to that of the people living on its banks. This river has been essential for all country and cultural activities: the wood from the Alps reached the Republic of Venice through its current, while agrarian production and local wine were an important resource for those living on the Adriatic coast.

The Piave overflows are still alive in the memories of our elders, who were also the bold authors of the ensuing rebuilding. Furthermore, the memory of the First World War fighting is a public heritage and the Piave was one of its main scenes, thus becoming "the river sacred for the Italian nation". In 1969 eleven partners founded the "Cooperativa Agricola LA SALUTE".

Nowadays the winery collects the grapes of twenty-four wine-growers and produces great wines thanks to specialized partners and consultants who participate in creating products highly representative of our territory.

Working in harness with enthusiastic consumers and important restaurateurs keeps the spirit of improving wine presentation alive, by proposing matches that satisfy the most demanding palates.

The promoters' intent, still alive today, was to offer to all experts and lovers "their best grapes and wines" that "testify" a serious effort both in the vineyard and the winery and represent the agriculture and territory of the Piave area all over the world....." click here...

 
 

The great Raboso Piave grapes are harvested when the first frost appear on the Treviso lowlands. The grapes are partially dehydrated and rich in essential components; long fermentation of the must with the skin and ageing in oak casks for at least two years, give a well-balanced flavour that only the Raboso Piave has. Purplish red wine almost impenetrable; the aroma is of marasca cherry, plum jam, spices, cinnamon, tobacco. This full-bodies wine has a powerful, aristocratic, persistent flavour and its acidity is a harmonious part of the structure. The finish offers pleasant hints of marasca cherries in alcohol and spices as previously sensed by the nose. Excellent with game of all kinds, mature cheeses and roasts with sauce.

This international grapes is grow in Ponte di Piave area from the end of the 19° century; the experience that our members has made, permit us to vinify grapes with an extraordinary potential. Ruby red colour with lively hues. The nose is complex, with aromas of vanilla, sweet spices, cocoa, liquorice, red berries and small blackberries. On the palate is full-bodied, well balanced, with sweet tannins. The wine mature in barrels of french oak for two years and bottle are aged for ten months in temperature- controlled binning cellars before selling. Serve with roasted or braised red meats or mature cheeses.

The must it obtained from late harvested grapes subjected to a brief cryomaceration; this must is left to ferment partly in oak barrels and partly in steel containers; follow a long ageing of the wine in contact with its own yeast in order to gain body and balance body and alcoholic strength. Intense pale yellow with green glints; sensations of exotic fruit, pineapple, ripe apricot, vanilla; well-balanced, sumptuous, fullbodies flavour. Ideal with all types of pasta dishes, tasty vegetable risottos, fish-based dishes also with raw fish and white meat.

Straw-yellow with greenish glints, intense varietal nose with apple flowery aroma. Extremely harmonious taste, pleasantly lively and fruity, fresh and clean. Ideal as an aperitif or accompanying delicate foods.

Intense ruby red wine, elegant aroma with hints of ripe raspberry, hay, currants and violets. Dry, harmonious flavour with a noticeable fragrant finish of wild berries and cherry. Ideal with roasts poultry and mature cheese.

This very pale yellow wine, has a very fine, fresh, distinctive aroma with hints of almond flowers and moss; dry, elegant flavour with touch of green almond and golden apple; excellent with hors-d'oeuvres, shellfish and cold white meat.

Pinot Bianco and Chardonnay grapes are carefully selected to give this fine sparkling wine, which is very pale yellow with greenish glints. It has a fine and persistent perlage and a delicate aroma of queen-apples and bread crust. Medium-bodies with a dry, wellbalanced, flavoursome and fresh taste, it is an elegant accompaniment for first courses in general, fish-based dishes and is particularly recommended as an aperitif.

The must stay with the skin until the end of the alcoholic fermentation; the juice is pumped over the cap frequently in order to extract color and aroma compound from the skins. Wine with a fruity bouquet mingling blackberries and raspberries with grassy, spicy cinnamon notes and hint of tobacco and hay. Harmonious, full-bodied and pleasantly tannic finish. Delicious with roast white meats, game, mature cheeses.

The long fermentation of the juice with the skins is followed by a long, traditional, agement. Wine with a fruity bouquet mingling raspberries and blackberries, with spicy cinnamon notes. Well-structured on the palate, harmonious and pleasantly tannic finish. Delicious with white or red meats and mature cheeses.
